    Directions

    先在月饼上面刷清水,可以防止皮面爆裂。

    Step 1

    把所有内层馅料混合,但不要揉太紧;以保鲜膜覆盖让它醒30-35分钟,然后分成20克1份,搓圆,然后以莲蓉包裹。Combine all inner filling ingredients in a mixing bowl. Stir to mix well. (Make sure that filling is not too hard and compact.) Wrap mixing bowl with cling film wrap and set aside for 30-35 minutes. Divide the filling into 20g portions and wrap with lotus paste. Roll into a ball.

    Step 2

    将所有皮料混合,让它醒1小时,然后分成20克等份。Mix pastry skin ingredients well together. Leave aside for an hour. Divide into 20g each.

    Step 3

    用1份皮料包1份馅料,然后压入迷你月饼模里,再轻轻扣出,放在烤盘上,表面刷少许清水。Wrap each piece of filling with pastry skin and press into mini mooncake mould. Tap to dislodge the mooncake. Arrange onto a baking tray. Lightly brush surface of mooncake with a little water.

    Step 4

    放入预热至190℃的烤炉里烤8分钟,然后取出,待凉15分钟,然后涂上蛋液;再入烤炉继续烤多10分钟至金黄色即可。Bake in a preheated oven at 190℃ for 8 minutes. Remove and allow to cool for 15 minutes. Brush with egg glaze and continue to bake further for 10 minutes or until golden brown.
